A Cup of Comfort


Let's get real.


I'm really hating winter right now.


I've been snowed in for a week.


It's cold, it's dark and it's wet. In fact, my whole world seems black and white.


It's more than a little depressing.


On days like this, I need to practice extreme self care ... to provide myself with some color, some vibrancy and some serious comfort.


And, I don't want a damn kale smoothie.

Right now, I want something freaking HOT, nourishing, colorful and comforting. Can you relate?


Sometimes we just need a cup of comfort

Not only is soup pure cozy in a cup, it can be one of the most nourishing, satisfying and energizing meals EVER.


Soup is comforting, easy to digest and supremely nourishing ... and when it's made with the sexy addition of nutrient-dense, colorful and seasonal veggies, it suddenly becomes a true DIY tonic for our MOOD and a serious energy elixir.


Here's a recipe for my favorite colorful, cozy, nourishing and pretty damn irresistible signature winter soup. It can easily be made with things you probably already have in your cupboards. You can substitute and swap out ingredients to your liking. Make it your own winter masterpiece! Here's how I do it:


Cup-of-Comfort Winter Soup


Ingredients:


Olive oil

Onion, diced

1-3 garlic cloves, minced

Meat (optional)

Carrot and celery

Potato (optional)

Butternut squash, peeled and chopped

Sweet potato or yam, peeled and chopped

1 can garbanzo beans, rinsed

1/2 cup green split peas or orange lentils, or both!

Zucchini, chopped

28-oz can organic whole peeled or diced tomatoes

Bone broth, veggie broth or water to cover

Your favorite seasonings

salt and pepper, to taste

fresh chopped parsley

Baby spinach or shredded cabbage.


Directions:


Heat the oil in a large pot, then add the onions and garlic and sauté low until translucent. Saute or add your meat, if using.


When your meat is cooked (and fat drained, if necessary), add all your veggies and legumes.

Pour in the tomatoes, broth or water and seasonings.


Cover and bring to a boil. Reduce heat to low and simmer until it is to your liking. Taste and adjust your seasonings.


Add baby spinach to your bowl before spooning in the hot soup. The spinach will wilt and be the perfect addition of color and nourishment. Or, you can add some shredded cabbage to the pot and let it cook briefly before serving for extra healthy heartiness. Add chopped parsley and you have yourself a beautiful, colorful, cozy cup of nourishment and comfort.
