You need a sweet treat, but you want it to be healthy. I hear you!!
My bestie, Nancy, gave me this recipe and it's one of my favorite, simple treats. I love it because it can be made in a jiffy in a mason jar or a fancy favorite bowl or goblet. Chia seeds are a gift - they are full of gentle fiber, omega 3 fatty acids and minerals. This recipe feels like a decadent dessert, but it's actually a healthy treat ... and it'll keep you regular, too;)
Chocolate Lover is the bomb ... makes it rich and just so EXTRA. I mean, why not make dessert a superfood?!
Try this recipe and let me know how you like it:
Chia Seed Pudding Parfait
1/4 cup whole chia seeds
1 cup milk of your choice
1 tsp. vanilla
1 tablespoon raw honey
1/2 tsp cinnamon
pinch of salt
Chopped fresh fruit, berries and/or raw nuts for layering and/or topping
Place the chia seeds in a bowl, set aside. Blend banana in a food processor or blender with the milk, vanilla, honey, cinnamon, salt (and superfoods if you have them).
Pour this mixture over the chia seeds and stir well. Let it sit for 10 - 20 minutes until thickened. Stir again.
Stir in or layer with fresh, juicy, beautiful berries or your favorite fruit and top with chopped raw walnuts, pistachios, almonds, pumpkin seeds or hazelnuts. It's your creation - make it amazing!
