One of the ways I show my love is through food.
My hubby has a massive sweet tooth, so making healthy treats for him has become a bit of a hobby for me.
This is a recipe given to me by my bestie, Nancy, the Raw Food Chick. She always has the best ideas for easy-peasy recipes that never disappoint.
Here is a decadent, healthy 4 ingredient recipe for flourless chocolate cake, just in time for Valentine's Day, your anniversary, your best friend's birthday, potluck or just a Sunday Funday. Top it with this simple raspberry sauce and you have a delicious dessert without even turning on the oven.
Four Ingredient No Bake Chocolate Cake
(flour, dairy and processed sugar-free)
3 cups raw walnuts
1 1/2 cups soft pitted dates
2/3 cup cocoa powder, raw cacao powder or carob powder
1 tsp. vanilla extract
pinch of salt
4 teaspoons water
Place the walnuts and salt in a food processor fitted with the S-blade.
Process until finely ground.
Add the dates, cocoa powder and vanilla. Process until the mixture begins to stick together.
Add the water and process briefly to your desired texture.
Transfer the mixture to an 8 inch round cake or torte pan.
Drizzle with Raspberry Sauce
Cover the cake with plastic wrap to keep it moist and it will stay in the refrigerator for three or four days, if it lasts that long.
Raspberry Sauce (makes 1 cup)
1 pint fresh raspberries in season, or one 10 oz frozen package, thawed and drained
1/3 cup soft pitted Medjool dates, soaked in water for about 20 minutes
Zest of 1 organic lemon
Place all ingredients in a blender or food processor and blend until smooth.
