Watermelon Cucumber Salad 🍉

It’s obvious, right? I mean, a trip through the drive-thru when it is so freaking hot just leaves you feeling … blah 🤢


All that grease and cheese does not mix with triple-digits, yo 😜 Now, you're even more hot and sluggish and irritable. ⁠

Not surprisingly, Chinese Medicine tells us we should be incorporating more cooling foods in summer months!


It’s not rocket science, honey - watermelon, cucumber, celery, and mint are super sexy, super juicy, cooling foods that hydrate, keep us juicy and help us beat this summer heat.


Here’s a super simple recipe for a Cucumber Watermelon Salad that will cool you the f*!ck off AND feed your goddess with its gorgeousness:⁠


INGREDIENTS⁠ 🍉⁠

1/4 c. extra-virgin olive oil⁠

2 tbsp. red wine, champagne or apple cider vinegar⁠

1/2 tsp. Himalayan or celtic sea salt, or to taste⁠

3 c. cubed seedless watermelon⁠

1 c. medium cucumber, peeled and chopped⁠

1 c. crumbled sheep feta or vegan substitute (optional)⁠

1/2 c. red onion, thinly sliced⁠

1/2 c. coarsely chopped mint⁠

Pinch of flaky sea salt to sprinkle over the top, if you have it.⁠

DIRECTIONS⁠🥒⁠

* In a small bowl, whisk together olive oil, vinegar, and salt. ⁠

* In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Add dressing, toss to combine.⁠

* Top with more mint (and flaky sea salt)
